Olive Oil Martini | RPM Restaurants Recipe

Looking for a new take on the martini? The Olive Oil Martini at RPM is a refined alternative to the traditional dirty. Developed by the RPM culinary and bar teams, it’s a smooth, savory cocktail that brings a chef-driven edge to a classic. Try it for yourself at home with the recipe below.

OLIVE OIL MARTINI 

Yield: 4 Cocktails

GLASSWARE: Martini

INGREDIENTS

FOR FROZEN OLIVE OIL FREEZER MARTINI:

  • 4 oz. Olive Oil Martini Batch

FOR OLIVE OIL INFUSED VODKA BATCH (yield for 4 cocktails):

*Store prepared batch in freezer and it will stay good indefinitely*

  • 12 oz. Ketel One Vodka
  • 2 oz. Giachi Dolciolio Olive Oil (Or another high quality flavorful olive oil)
  • 1 rosemary sprig
  • 1 thyme sprig
  • 4 oz Filtered Water

FOR MARINATED OLIVES:

*Store refrigerated for up to 1 month*

  • 6 oz. Termite Olives
  • 6 oz. Cerignola Olives 
  • 6 oz. Castelvetrano Olives
  • 24 oz of Carmona Olive Blend
  • 2 ⅔ cups Extra Virgin Olive Oil
  • 3 garlic cloves, crushed
  • 1 lemon peel
  • ½ tsp. chili flake
  • ½ tsp. Fennel seed
  • 1 rosemary sprig
  • 2 thyme sprigs

A couple things to note here:

  • This makes a bit more olives than needed for the martinis, but makes a great snack for any time!
  • The olives contain pits! If you can’t find these specific olives, don’t hesitate to grab what is available.

METHOD

FOR THE OLIVE OIL INFUSED VODKA BATCH:

  1. In a sealed container combine the Ketel One Vodka, Olive Oil, rosemary sprigs, and thyme sprigs.
  2. Whisk well and let infuse at room temperature for 5 hours, whisking once every hour
  3. Transfer to the freezer overnight for 12 hours.
  4. Remove solidified oil and strain through a coffee filter-lined fine strainer, specifically while liquid is still very cold (Best do let it strain in the fridge so the olive oil bits remain solid!)
  5. Add 4 oz. of water to the mixture for 25% dilution.
  6. Pour into a glass bottle with a sealed lid, and keep in your freezer


FOR THE OLIVES:

  1. Warm the oil, lemon herbs and spices, until simmer
  2. Pour the oil mixture over the olives
  3. Let marinate overnight
  4. Store refrigerated in airtight container
  5. Remove from fridge 15-20 minutes before serving

FOR BUILDING THE COCKTAIL:

  1. This is a freezer martini! Store in your freezer to keep as cold as possible.
  2. When ready to serve, pull the bottle directly from your freezer and pour directly into your glass of choice.
  3. Enjoy alongside marinated olives.
