The Art of the Table: Signature Tableside Dishes

Steak Tartare

Our tableside Steak Tartare is a masterclass in precision. It begins with the presentation of a Westholme Wagyu beef resting over a pristine plate of crushed ice to maintain the perfect temperature. Guests view the perfectly measured Wagyu beef alongside pristine rows of shallots, cornichons, capers, and chives. After a drizzle of premium olive oil, the runner cracks a delicate quail egg, mixing the ingredients tableside with two gold spoons. The final touch is the quenelling of the tartare, a culinary technique to shape it into an elegant oval, before the dish is served in a marble bowl and a side of crispy gaufrette chips.

The Tomahawk is then sliced clean and served with custom seasonings, fresh peppers, and parsley.

Dover Sole

The Dover Sole service is a masterful display of precision, transforming the whole roasted fish into perfect, boneless filets right before the guest. Our food runners are meticulously trained to use a synchronized spoon and fork technique to stabilize the delicate fish while extracting the bones. To ensure the cleanest possible finish, they utilize a pro-tip: setting the fork between the prongs of the spine to cleanly pull it away from the flesh. The final, elegant step is the tableside pour of a rich house sauce over the perfectly fileted sole 

Slowing Down for Dessert

While the dessert course at many bustling restaurants can feel rushed, RPM Steak utilizes this final course as another intentional moment to slow the rhythm down. From serving Martha M’s Special Occasion Carrot Cake with a delicate dollop of house-made vanilla chantilly cream, added at the table, to drizzling rich chocolate tableside on the 14k Chocolate Cake and Cookies & Cream Sundae, each dessert offers the final touch to an unforgettable meal. 

Tableside Sommelier Service

No premier wine destination is complete without an expert to guide you through the cellar. At RPM Steak, Wine Director Brennan Sopko has spent years elevating what a sommelier brings to the table.

While some assume a sommelier’s role is strictly transactional, Brennan and his team prioritize taste over price, ensuring every recommendation matches the guest’s desires. If a specific bottle isn’t available, it serves as an opportunity to introduce the table to an unexpected vintage or producer.

Brennan’s favorite aspect of tableside wine service is the opportunity to communicate directly with the guests. Many guests often use their own unique vocabulary and personal sensory memories to describe what they enjoy. The sommelier’s responsibility is to interpret those descriptions and return from the cellar not with a single split-second guess, but with two or three curated bottles for the table to evaluate. This intentional interaction turns a standard dinner into a lasting relationship — culminating in the ultimate compliment when regulars return to the restaurant, recognize Brennan, and trust their experience to his expert guidance
